Redwood Valley AVA
Golden yellow color. Aromas of maple walnut granola, spice drop candies, white peach, and clove with a round, bright, fruity medium body and a refreshing, medium-length vanilla buttercream, caramelized pineapple, flint, and praline finish with moderate oak. A lovely soft and nutty chardonnay that will be a great cool-weather white.
95% 2016 Chardonnay (Silva Family's Vineyards), 5% Chardonnay (Sta. Rita Hills)
Fermented in one new (Dargaud & Jaegle) and 4 neutral french oak bbls. Native fermentation that finished on 10/4. Partial malo conversion (native bacteria) took place slowly and didn't finish until mid-February '17. The barrels were stirred weekly through malo conversion.
